Honeymoon Curry !!!

Ingredients:

1. Egg plant: 1 medium sized.
2. Potatoes: 2 medium sized
3. Tomatoes: 2
4. Green Chilli: 2
5. Onion: 1
6. Bayleaf: 1
7. Paanch Foron: Small amount
8. Oil: 4 table spoons
9. Turmeric powder: 1/2 teaspoon
10. Dhania Powder: 1/2 teaspoon
11. Red Chilli Powder: 1/4 teaspoon
12. Jira Powder: 1/2 teaspoon
13. Ginger paster: 1 table spoon
14. Garlic paste: 1 table spoon
15. Salt to taste
16. Sugar: small amount
17. Water: 1 cup

Procedure/ Directions:

1. Cut the egg plant, Potatoes and Tomatoes into shapes of small cubes. 

2. Cut onion into  thin slices.

3. Cut Green Chilli in the middle half-3/4  way

4. Heat oil in a frying pan with medium heat.

5. Put Onion, Chilli, Paanch Foron and Bayleaf in it and stir until the onion in simmered in oil and soft.

6. Put Ginger and Garlic paste and stir for sometime until they mix well.

7. Put Turmeric powder, Dhania Powder, Red Chilli Powder and Jira Powder and stir well to make a paste.

8. Then put potatoes and stir well so that the spice mix with it well. Cook for 2 minutes or so, until you feel, the potatoes are well immersed in oil and spice.

9. Then add, Egg plant and salt. Stir and mix continuously until the spice mixes with it well. Put 1 cup water in the mixture and decrease the heat to 1/4 of max and cover the pan with the lid and let it cook for 5-6 minutes until the the water has been suffiently evaporated and made the potatoes soft.

10. Then uncover lid and put the tomatoes in then and stir for some time to let them mix. Taste the salt. If the salt is not ok to taste, add some more salt and stir.

11. Add some suger and stir continuously.

12. When you feel that the vegetables are cooked properly, use a spoon to taste. If everything seems ok, then turn off the stove and serve nicely in a bowl.

You can eat this with rice or tortillas or chapatis. It's yummy!!
